Le Bilboquet Thursday announced the promotions of four executives to support its continued growth in Atlanta and its debut in the Denver market. Le Bilboquet, a French restaurant in The Shops Buckhead Atlanta, Thursday announced several executive promotions to support its continued growth in Atlanta and its debut in the Denver market. Effective immediately, Ilona Knopfler is a managing partner, Rainer Shaw is the regional director of operations, Cyrille Holota is the regional executive chef and Sosthene Kabore is the chef de cuisine.

♦ Knopfler has more than 20 years of international hospitality experience. In her role as managing partner, she manages and monitors all front of house operations, including guest relations, staffing and special events for Le Bilboquet’s Atlanta and Denver locations. Prior to joining Le Bilboquet’s opening team as maître d, Knopfler was a partner in a family operated crêperie and worked as a catering and event planner at La Rose Noire, a family owned and operated fine dining French restaurant in Hong Kong.

♦ Shaw’s experience culminates from nearly two decades of food, beverage and hospitality positions. In his role as regional operations manager, he oversees all back-of-house operations in Atlanta and Denver, including processing daily cash flow and handling all accounts receivable and accounts payable. Before coming to Le Bilboquet, Shaw was a multi-unit manager for The Gidewon Group.

♦ Holota’s resume includes stints at top restaurants such as the Four Seasons Resort Bora Bora and Buckhead’s Joël and The Ritz-Carlton. In his position as regional executive chef, Holota leads the teams in Le Bilboquet’s Atlanta and Denver kitchens.

♦ As chef de cuisine, Kabore oversees the Le Bilboquet’s Atlanta kitchen and reports to Holota. He has several years of experience working at restaurants in New York.

“With these new appointments, we continue to provide exceptional dining experiences for our guests that exceed expectations and creates lasting memories,” Le Bilboquet co-owner Rick Wahlstedt said in a news release. “Each member of the executive team brings tremendous expertise and in-depth knowledge of the restaurant industry.”

The promotions follow Le Bilboquet’s recent announcement regarding its plans to open a Denver location in mid-2019.
